Spaghetti and green beans: A simple leftovers pasta recipe

When you forgot to buy groceries, your dinner options can be few and far between but there are some great pantry and fridge recipes to to make. You can either make fried rice or pasta dishes and our spaghetti and green beans is a great option to have. Green beans often get forgotten in the fridge and this recipe is the perfect time to use them, as well as leftover beef or other meat.
Spaghetti and green beans
If you have leftover beef, lamb or cicken, shredding it for the pasta is simple and you don’t even need too much of it for flavour. Cook the green beans with some butter and lots of black pepper until tender and you can choose to chop them up or keep them whole. It’s a very healthy pasta recipe and you can also add grated carrots and other bean variations to the recipe. Remove the dairy and meat, and you have a great vegetarian pasta too.

Spaghetti and green beans recipe

350 g spaghetti
60 g butter
salt and pepper
1 small packet frozen green beans
170 g cooked salt beef
150 ml sourcream
1 bunch watercress
Method
- Cook the spaghetti in a large saucepan of salted, boiling water for 12 minutes or until tender. Drain and keep hot.
- Meanwhile melt butter and fry defrosted beans for 5 minutes. Chop meat or cut into neat strips and add to pan with salt, pepper and the soured cream. Heat gently without boiling for 5 minutes.
- Put the spaghetti into a serving dish and add the sauce. Arrange watercress in a ring round the dish.
- Serve immediately.
